Nutritional info
At Lab 13, we care deeply about the quality of the fish we serve. Your health and experience are our top priorities. Sushi is more than just a culinary art; it’s a balance of taste, tradition, and nutrition.
Health Benefits of Fish
Many of the fish and shellfish we serve are rich in Omega-3 fatty acids, essential nutrients that support brain function, reduce inflammation, and promote healthy development. These “good fats” can’t be produced by the body and must be consumed through food.
Here’s a breakdown of the estimated calories in our hand roll set menus:
Set Menu Calories
3 Hand Roll Set: 368
4 Hand Roll Set: 458
5 Hand Roll Set: 621
6 Hand Roll Set: 734
Food Safety
Most of our seafood is served raw, except for items like crab, lobster, eel, and our quick-cooked shrimp. While we take every precaution, raw or undercooked seafood carries some risk, especially for pregnant women. We recommend consulting your physician if you have dietary concerns or allergies.
Mercury Awareness
We follow FDA and EPA guidelines closely and test our fish regularly. Mercury is found in nearly all ocean fish, but our testing shows levels far below FDA limits. Still, we advise mercury-sensitive individuals—such as pregnant or nursing women and small children—to follow the recommended limits of 12 ounces of low-mercury fish per week (and no more than 6 ounces of albacore tuna).
Escolar Advisory
We occasionally serve escolar, a buttery fish known to cause digestive reactions in some people due to its wax esters. To ensure safety, we limit portions to less than one ounce per person and do not serve it to children. Please let us know if you’ve had a reaction in the past or have concerns.
Food Allergies & Gluten
If you have a food allergy, please inform your server. While we take allergies seriously, our kitchen handles common allergens and cross-contact is possible. If your allergy is severe, we recommend erring on the side of caution. Please note: our house-made soy and ponzu sauces contain gluten.
Transparency in Labeling
Seafood labeling can be confusing. We partner with experts to ensure accurate naming and sourcing of our fish. Here are some clarifications:
Hirame = Fluke (Paralichthys dentatus)
NZ Sea Bream = Pagrus auratus
Kampachi = Longfin Amberjack from Hawaii
Hamachi = Japanese Yellowtail
Salmon = Atlantic Salmon from Scotland
Tuna = Bigeye, Yellowfin, Bluefin, or Albacore
Our Commitment to Sustainability
Sourcing sustainably is one of our biggest challenges—and responsibilities. We support ethical fishing practices, responsible aquaculture, and evolving techniques that reduce strain on ocean ecosystems. As part of that commitment, we’ll continue to explore and introduce more sustainable options when necessary.
